Description

Potato pancakes

  • Makes 12 pancakes.

Ingredients

Procedures

  1. Place potatoes in colander and rinse.
  2. Dry on paper towels.
  3. In a large bowl, combine Onion, flour and parsley.
  4. Stir in egg , egg-white , salt and pepper.
  5. Add potatoes and mix well.
  6. Spray a large non-stick skillet with vegetable cooking spray.
  7. Heat skillet over medium-high heat.
  8. Add 1 teaspoon of the butter.
  9. Place about 3 tablespoons of Potato mixture in skillet.
  10. Flatten into pancake with spatula.
  11. Make 3 more pancakes in skillet as directed.
  12. Cook until browned on the bottom, about 7 minutes, pressing with spatula.
  13. Turn carefully; cook until golden on the other side, about 6 or 7 minutes.
  14. Place on a plate and cover to keep warm. Repeat twice with the remaining butter and Potato mixture.
  15. Serve with applesauce, sour cream or yogurt.
