Yu Lan Cao Yu Song
Description
Fried minced dace with kale
Ingredients
- 150 g minced dace fillet
- 300 g kale
- 1 stalk spring onion
- 1 stalk parsley
Seasoning 1
- ⅓ tbsp salt
- ½ tbsp cornflour
- some sesame oil
- some pepper
- 3 tbsp water
Seasoning 2
- 1 tbsp ginger juice
- 1 tbsp yellow wine
- ⅓ tbsp salt
- ⅓ tbsp sugar
Sauce
- 1 tbsp oyster sauce
- 1 tbsp light soy sauce
- ½ tbsp cornflour
- 3 tbsp water
Procedures
- Add seasoning (1) on minced dace and stir until sticky.
- Chop spring onion and parsley, mix well with dace.
- Heat wok with oil, fry dace both side into thin sheet, until golden.
- Cut the dace sheet into stripes of finger size when it cool down.
- Cut kale into sections, parboil in hot water with seasoning (2).
- Add 2 tbsp of oil, boil for 3 minutes, then arrange on surface of dish.
- Heat wok with ½ tbsp of oil, stir fry dace with sauce.
- Pour the boiled sauced daces on surface of kale, serve.
