A recipe of vegan mayonnaise with tofu and olive oil.

Ingredients

  • tofu (6 oz) - Silky or soft preferred
  • olive oil (3 tablespoons)

Procedure

  1. Drain the tofu and blend in a food processor/blender until smooth.
  2. Add the oil slowly to the blended tofu while the blender is still running. This emulsifies the mixture.
  3. Add additional spices, salt, black pepper to taste.
