Skillet-fried Ranch Potatoes

  1. Heat oil in large skillet over medium high heat.
  2. Slowly add potatoes and onions to hot oil.
  3. Cover pan with a lid.
  4. Turn diced potatoes with a spatula every 2 to 3 minutes or until golden brown.
  5. After 6 minutes of cooking, stir dry ranch dip mix into potatoes.
  6. Cook another 6 to 8 minutes, turning potatoes every 2 to 3 minutes.
