Rolled Oats Banana Bread
Description
Inherited from the Davidson Estate in Terrell, Texas in 1987. This recipe indicates it came from the back of a rolled oats container and is dated 1924.

Ingredients
- ⅓ cup granulated sugar
- ⅓ cup brown sugar
- ⅓ cup butter-flavored vegetable shortening (recipe revamped to include butter flavor shortening)
- 1 teaspoon vanilla
- 2 eggs
- 2 large ripe bananas
- ¼ cup sweetened bakers coconut
- ½ teaspoon salt
- 2¼ teaspoons baking powder
- 1¾ cup all-purpose flour
- ½ cup rolled oats
- ¾ cup chopped walnuts
Procedures
- Preheat oven to 350°F.
- cream sugars and shortening.
- Add eggs, vanilla, and mashed bananas.
- Stir in remaining dry ingredients, coconut, and walnuts.
- Pour into well-greased loaf pan.
- Bake 1 hour, or until toothpick inserted in center comes out clean.
