PUMPKIN SOUP WITH CHIVES

Ingredients

Procedures

  1. Cook, covered, in boiling water about 25 minutes.
  2. Mash and let drain in strainer for 30 minutes.
  3. Cook diced Onion with stock in a saucepan for about 10 minutes.
  4. Add pumpkin puree and seasonings.
  5. Process in blende .
  6. Add cream and heat through.
  7. Taste and adjust seasonings.
  8. Ladle into pumpkin shell replace lid, and ladle into individual bowls at the table.
  9. Garnish each with a dollop of whipped cream and sprinkle with chopped chives.
