Pistachio Muffins
Description
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hager Estate in Canton, Texas in 1982. From "Catsrecipes Y-Group"[1]
Ingredients
- 2 cups sifted enriched flour
- 4 teaspoons baking powder
- ½ teaspoon salt
- ¼ cup sugar
- 1 egg beaten
- ¼ cup melted shortening
- 1 cup milk
- ⅓ cup chopped pistachios
Procedures
- Preheat oven to 400°F.
- Sift dry ingredients together then mix egg,shortening and milk together thoroughly.
- Combine mixtures and nuts stirring just enough to dampen flour.
- Fill greased muffin pans ⅔ full and bake for 25 minutes.
