Mozzarella Rice

Ingredients
- 2 cups cooked rice
- 1½ cups (6 ounces) shredded mozzarella cheese, divided
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- 1 cup vegetable juice or tomato juice
- 1 tablespoon chopped fresh parsley
Procedures
- Combine rice, ½ cup cheese, Italian seasoning, garlic powder and juice in buttered 1-quart baking dish.
- Top with remaining 1 cup cheese; sprinkle with parsley.
- Bake at 350 °F for 15 minutes.
