Maryland-style Crab Cakes

Purchased from the Wantier Estate in Balch Springs, Texas in 1988.

Ingredients
- 1 pound crab meat
- ¼ cup mayonnaise
- 2 tablespoons minced parsley
- 1 teaspoon Old Bay seasoning
- ½ cup soft bread crumbs
- 2 large eggs, beaten
- 8 tablespoons butter
Procedures
- Gently blend all ingredients except butter.
- Shape into 8 crab cakes and refrigerate for 30 minutes.
- Melt butter in a large skillet and saute crab cakes until golden brown on all sides for 5 – 7 minutes.
