Hill Country Chicken and Rice
Description
Makes 6 servings.
Ingredients
- 1 broiler-fryer, cut into serving pieces
- 1 teaspoon seasoned salt
- 1 teaspoon paprika
- ½ teaspoon garlic salt
- ¼ teaspoon seasoned pepper
- 1 large, heavy brown paper bag
- 1 tablespoon vegetable oil
Seasoned rice
- 1 cup uncooked rice
- ½ cup sliced green onions
- 1 tablespoon butter or margarine
- 1 x 4-ounce can sliced mushrooms, including liquid
- 2 cups chicken broth
- ½ teaspoon salt
- ¼ teaspoon seasoned pepper
Procedures
- Wash and dry chicken. Combine seasoned salt, paprika, garlic salt and seasoned pepper; sprinkle over chicken. Rub seamless wide side of bag with oil.
- Arrange chicken inside bag on greased surface, forming a single layer. Close bag opening, securing with paper clips.
- Place on foil-lined baking pan and bake at 375 °F for 1 hour. Serve with rice.
