Ham and Rice Seville
Makes 6 servings
Ingredients
- 1 cup chopped Onion
- 1 cup sliced celery
- 1/2 cup diced green pepper
- 2 tablespoons butter or margarine
- 3 cups cooked rice
- 2 cups diced cooked Ham
- 1 tablespoon grated orange peel
- salt and ground black pepper to taste
- 2/3 cup Mayonnaise
- 2 cups fresh orange segments
Procedures
- Cook Onion, celery and green pepper in butter until tender crisp.
- Add rice, Ham, orange peel, salt, pepper and Mayonnaise; toss lightly.
- Turn into a buttered casserole.
- Bake at 350 degrees 15 to 20 minutes.
- Garnish with orange segments.
