Gourmet Mushroom Rice
Description
Makes 6-8 servings
Ingredients
- 1 pound fresh mushrooms, sliced in half
- 1 cup chopped onion
- ¼ cup diced fully cooked ham
- 1 tablespoon butter or margarine
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- 3 cups hot cooked rice
- ¼ cup dry sherry
- ¼ cup chopped fresh parsley
Procedures
- Cook mushrooms, onion and ham in butter in large skillet over medium heat until onion is golden.
- Stir in salt, pepper and sherry; heat.
- Pour over rice and toss lightly.
- Garnish with parsley.
