Gluten-Free Banana Bread
Description
Gluten-Free Banana Bread [1] [2] [3] [4] is a nice breakfast treat or a snack that can be modified by adding nuts or chocolate to the recipe.
Ingredients
- 1 cup soy flour
- 1/2 cup potato starch flour
- 1/4 cup rice flour
- 3/4 tsp baking soda
- 1 1/4 tsp cream of tartar
- 1/2 tsp salt
- 1/3 cup shortening
- 2/3 cup sugar
- 2 eggs, well beaten
- 1/2 cup mashed banana
- Optional: 1/2 cup chopped nuts
Procedure
- Sift together the flours, baking soda, cream of tartar, salt.
- Set aside.
- Cream shortening.
- Slowly include sugar to cream by lightly beating together.
- Achieve a light and fluffy consistency.
- Include well beaten eggs by beating.
- Slowly incorporate the dried mixture, alternate adding the mashed banana.
- Beat well after each addition, achieveing a smooth consistency.
- Include chopped nuts or any addition desired.
- Grease a loaf pan.
- Warm oven to 350 degrees F.
- Pour mixture into greased loaf pan.
- Bake for 1 hour.
