Gazpacho Salad I

Description

A salad to go with the paella From "Catsrecipes Y-Group"

Ingredients

• 3 cups plum tomatoes, chopped
• 1 cucumber, seeded, peeled and diced
• ¼ cup chopped onion
• ⅓ cup fresh cilantro, chopped
• 1 jalapeno pepper, seeded and diced (I usually leave this out)
• ¼ cup olive oil
• ¼ cup red wine vinegar
• salt and pepper to taste

Procedures

1. Combine all ingredients and mix well.
2. Allow salad to sit at room temperature for about an hour to allow flavors to blend.
