½ lb fresh
crab
meat
¼ cup
onion
, minced
¼ cup
red pepper
,minced
2 tbsp
jerk spice
2 tsp
honey
½ cup
mayonnaise
1 cup fresh
bread crumbs
3 tbsp
butter
sweet lime
salsa
to serve
Procedures
In a small bowl, gently mix all the ingredients (except for the
butter
and salsa) until combined.
Form into 12 crab cakes.
Fry the crab cakes in
butter
over a moderate heat, until golden brown on both sides.
Serve with the sweet lime
salsa
.
