Belizean Pumpkin Soup

Ingredients

• 1 lb pumpkin (diced) 450g
• 1 large onion (sliced)
• 4-6 cups water
• 1 stalk celery (chopped)
• 1 large firm tomato (diced)
• 2 potatoes (diced)
• 2 tblsps flour and 2 tbsps water for thickening

Procedures

1. Collect all ingredients and equipment.
2. In saucepan put all seasonings and vegetables except tomato in water.
3. Boil for 20 minutes.
4. Add tomatoes. Cook for another 5 minutes.
5. Thicken more if desired. Serve hot.
