Ingredients
- (about 1lb) boneless chicken meat diced400 grams
- chicken stock3 cups
- (3.5 oz) straw mushrooms100 gramshalved 6 cherry tomatoes
- fresh lemon grass stem cut into short lengths1 unit
- kaffir lime leaves2-3 unittorn
- Thai fish sauce3 tbsp
- fresh lime juice4 tbsp
- sugar1/2 tsp
- hot fresh Thai chilies5-6 unitjust broken with pestle
Method

Place the stock in a pot, add the lemon grass and kaffir lime leaves, and bring to boil over medium heat.

Add the chicken meat, mushroom, fish sauce, lime juice, and sugar; cook slowly and uncovered for 10 minutes. Do not stir.

Add the tomatoes and chilies and cook for 5 more minutes. Remove from heat.
