- extra virgin olive oil5 tbsp
- garlic clove1 unitfinely chopped
- onion1 mediumfinely chopped
- celery stalk1 unitfinely chopped
- parsley1 tbspfinely chopped
- spinach3 1/2 ozroughly chopped
- Swiss chard3 1/2 ozroughly chopped
- courgettes3 1/2 ozsliced into rounds
- carrot1 largesliced into rounds
- green cabbage1/2 unitshredded
- potatoes3 mediumpeeled and roughly chopped
- fresh plum tomatoes3 unitpeeled, deseeded and thinly sliced
- .5 litres hot vegetable stock1 unit
- tinned borlotti beans3 1/2 ozdrained
- fresh or frozen peas7 oz
- short pasta7 ozsuch as tubettini or shells
- Parmesan cheese1 1/2 ozfreshly grated

Over medium heat, warm olive oil.

Include the garlic, onion, celery and half of the parsley, while stirring.

Include spinach, Swiss chard, courgettes, carrot and cabbage.

Constantly stirring.

Include potatoes and tomatoes.

Include hot vegetable stock.

For ~30 min gently let simmer.

Occasionally stir.

Include beans, peas and pasta.

Let it all simmer together.

Ensure pasta has been cooked and is soft.

Move pot from the heat.

Include the other half of the parsley and Parmesan.

Let soup sit for ~10 minutes, then serve.
