  • low sodium vegetable broth
    4 cups
  • canned tomatoes
    diced and undrained
    2 1/2 cups
  • Chickpeas
    drained and rinsed
    19 ounces
  • fresh spinach
    stems removed, chopped
    10 ounces
  • herbed croutons (or your choice flavor)
    3 cups
  • saffron (different tasting soup without it)
    1/4 teaspoon
  • salt & freshly ground black pepper
    to taste
