- pork shoulder3/12 lbcut into cubes and ground in a meat grinder (approx 1/2 of a pork shoulder at my grocery store, they should cut it in half for you, make sure to use the fatty side for this)
- Ancho Chiles (dried)5 unit
- Pasilla chiles (dried)3 unit
- Chipotles (dried)2 unit
- coriander1 tspground
- dried oregano1 tsp
- ground cloves1/2 tsp
- ground cumin1/4 Tbsp
