Ingredients

  • habanero chiles
    stemmed
    2 unit
  • salt
    1 1/2 tsp
  • freshly ground black pepper
    1 1/2 tsp
  • Juice of two lemons
    1 unit
  • Zest of one lemon
    finely grated
    1 unit
  • tbs minced garlic
    2 unit
  • white wine
    1/2 cup
  • unsalted butter
    melted
    1/4 cup
  • extra-virgin olive oil
    1/4 cup

Method

Run everything in a blender until smooth. Keep refrigerated for up to 1 1/2 weeks, and shake well before using.
