Ingredients
- habanero chiles2 unitstemmed
- salt1 1/2 tsp
- freshly ground black pepper1 1/2 tsp
- Juice of two lemons1 unit
- Zest of one lemon1 unitfinely grated
- tbs minced garlic2 unit
- white wine1/2 cup
- unsalted butter1/4 cupmelted
- extra-virgin olive oil1/4 cup
Method

Run everything in a blender until smooth. Keep refrigerated for up to 1 1/2 weeks, and shake well before using.
