Ingredients

  • Roma tomatoes
    whole, not cored or cut in any way
    5 large
  • serrano or jalapeno chile
    1 unit
  • garlic
    skin on
    2 cloves
  • minced white onion
    1/4 cup
  • salt
    or to taste
    1 tsp
  • bunch cilantro
    1/2 unit

Method

Cover a pan with aluminum foil.

Place pan over medium-high heat.

Dry roast the whole tomatoes, chile, and garlic cloves on all sides.

Achieve some charring.

Garlic and chile should be done quickly, tomatoes should take at least 10 min.

Stem chile and peel garlic.

Chop/process tomatoes, garlic, chile, onion, salt and cilantro.

Achieve a smooth consistency.
