Ingredients

  • plus 2 tsp butter or olive oil
    1 tbsp
  • chopped garlic
    1 tsp
  • medium shrimp
    peeled, tails removed, and cut in half if large
    1 pound
  • finely chopped chipotles in adobo
    1 tsp
  • salt
    1/4 tsp
  • corn tortillas
    1 Large
  • grated Jack cheese
    1 1/2 cups
  • Chipotle salsa
    1 unit
  • Guacamole
    1 unit
  • Mango habanero salsa
    1 unit
  • Cilantro sprigs
    1 unit

Method

Over medium heat melt butter/olive oil in a large pan.

Include the garlic and shrimp, stir.

Achieve pink shrimp.

Include chipotles and salt, stirring.

Remove from heat.

Warm a large heavy pan, include the butter/oil.

Warm corn tortilla in pan, and sprinkle 2 tbsp of shredded cheese evenly.

Include 2-3 shrimp on one side of the tortilla.

When cheese starts to melt close the tortilla in half.

Fry both sides to achieve a crisp and golden appearance.

Remove from heat and open tortilla.

Include 1 tsp chipotle salsa, 1 tbsp guacamole and 1 tbsp mango habanero salsa.

Include a few cilantro sprigs, then close tortilla.
