Ingredients
- plus 2 tsp butter or olive oil1 tbsp
- chopped garlic1 tsp
- medium shrimp1 poundpeeled, tails removed, and cut in half if large
- finely chopped chipotles in adobo1 tsp
- salt1/4 tsp
- corn tortillas1 Large
- grated Jack cheese1 1/2 cups
- Chipotle salsa1 unit
- Guacamole1 unit
- Mango habanero salsa1 unit
- Cilantro sprigs1 unit
Method

Over medium heat melt butter/olive oil in a large pan.

Include the garlic and shrimp, stir.

Achieve pink shrimp.

Include chipotles and salt, stirring.

Remove from heat.

Warm a large heavy pan, include the butter/oil.

Warm corn tortilla in pan, and sprinkle 2 tbsp of shredded cheese evenly.

Include 2-3 shrimp on one side of the tortilla.

When cheese starts to melt close the tortilla in half.

Fry both sides to achieve a crisp and golden appearance.

Remove from heat and open tortilla.

Include 1 tsp chipotle salsa, 1 tbsp guacamole and 1 tbsp mango habanero salsa.

Include a few cilantro sprigs, then close tortilla.
