Ingredients
- canola oil1 teaspoon
- chopped onion¾ cup
- seeded green bell pepper1 small
- celery rib1 smallthinly sliced
- finely chopped garlic2 teaspoons
- (14-ounce) crushed tomatoes1 can
- bay leaf2 unit
- ground paprika1 teaspoon
- ground chipotle chili¼-½ unit
- small or medium shrimp¾ poundshelled
- salt and freshly ground black pepper1 unit
- cooked long-grain brown rice2 cups
Method

Heat the oil in a medium skillet over medium-high heat.

Sauté the onion, celery, pepper, and garlic until the onion is translucent, 4 to 5 minutes.

Add the tomatoes, bay leaves, paprika, and chipotle chili.

Simmer the sauce, uncovered, until it is thick, 15 to 20 minutes, stirring it 2 or 3 times.

Add the shrimp and cook, uncovered, until they are pink and firm, 5 to 7 minutes, depending on their size.

Season to taste with salt and pepper.
