Ingredients

  • ground allspice
    1/2 tsp
  • salt
    1 tsp
  • black pepper
    1 tsp
  • cayenne pepper
    2 tbsp
  • ground ginger
    1/2 tsp
  • ground cinnamon
    1 tsp
  • freshly grated nutmeg
    1/4 tsp
  • dried thyme
    1/2 tbsp
  • dehydrated lemon peel
    2 tbsp
  • dark rum
    3 tbsp
  • boneless skinless chicken breasts

  • brown mustard
    1/4 cup

Combine rum and mustard and rub all over chicken.

Combine remaining ingredients and rub all over chicken. Refrigerate for at least 1 hour.(Better if marinated over night

Place on a greased preheated charcoal grill and cook, turning constantly until internal temperature reaches 165°. Remove and let rest for 10 minutes. Serves 4.
