Ingredients
- -lb broiler/fryer chicken1 3 unitgiblets removed
- Country Roast Chicken Seasoning1/4 cup
- rosemary3 sprigs
- thyme8 sprigs
- lemon1 largesliced thinly
- lemon1 largewedged
- butter2 tbsp
Method

Loosen skin from chicken. Rub flesh with Seasoning.

Place lemon slices in the bottom of a roasting pan and place chicken on top.

Stuff cavity with thyme, rosemary, and lemon wedges.

Place 1 tbsp butter under the skin of each breast.

Insert an oven-safe probe thermometer into the breast but not touching butter.

Bake in a 325° oven until breast internal temperature reaches 165° and thigh meat reaches 170°. Cover with foil and let rest 10 minutes; serve.
