Ingredients

  • onion
    finely chopped
    1 medium
  • olive or canola oil
    2 tablespoon
  • lemon juice
    1 tablespoon
  • minced fresh rosemary
    1 teaspoon
  • minced fresh thyme
    1 teaspoon
  • grated lemon peel
    1 teaspoon
  • garlic clove
    minced
    1 unit
  • salt
    ½ teaspoon
  • pepper
    ½ teaspoon
  • pork tenderloins (1 pound each)
    2 unit

Method

Combine the first nine ingredients.

Rub over tenderloins.

Place on a rack in a shallow roasting pan.

Bake uncovered at 400°F or until a meat thermometer reads 160°F.

Cover with foil and let stand 10 minutes before slicing.
