Ingredients

  • (12⅓ ounce) package Mori-Nu firm silken tofu (I use lite)
    1 unit
  • soy cream cheese
    8 ounces
  • key lime juice
    ½ cup
  • freshly grated key lime rind
    2 teaspoons
  • (4 ounce) packages Mori-Nu Mates vanilla pudding mix (must be this brand
    it's made to go with the tofu)
    2 unit
  • liquid sweetener
    to taste (I use honey but that's not vegan!)
    1 tablespoon
  • (9 inch) baked pastry shells or graham cracker crust (I prefer graham)
    1 unit
