- eggs' worth of egg substitute or 2 – 4 egg whites1 to 2 unit
- fat-free or low-fat cottage cheese (I use 1%)½ cup
- fat-free plain yogurt½ cup
- reduced fat tofu (Mori Nu Lite)1 cupcubed
- salt and pepper to taste1 unit
- or 2 of Tabasco sauce1 dash
- one or more of the following:1 unit
- chopped onion½ cupsauteed in liquid of choice
- – 1 cup chopped fresh mushrooms½ unit
- chopped cooked broccoli1 cup
- spinach or leeks1 unit
- fat-free mozzarella cheese½ cup
- herbs to taste (parsley1 unitbasil, marjoram are all good)
