- can straw mushrooms1 large
- black fungus mushrooms or any variety of mushroom you're comfy with — I used a dried version of these and they became huge!3 to 4 unit

- dry sherry or rice wine¼ cup
- cider vinegar⅓ cup
- soy sauce2 tbsp
- egg whites2 to 3 unit
- sliced scallions3 unit
- white pepper¼ to ½ tsp
