Ahi Tuna Tartare with Avocado

Ingredients
- 1 tsp water
- ¾ cup seasoned rice wine vinegar
- ½ cup lime juice
- ¼ cup soy sauce
- 3 garlic cloves, chopped finely
- 1½ tsp salt
- 1-2 Tbs. chopped cilantro
- 1¼ cups vegetable oil
- ¼ cup Asian sesame oil (toasted)
- 6 pounds California avocados
- 4½ pounds ahi tuna
