Bahia Black Bean Soup

Description

A traditional Honduran recipe.

Ingredients

  1. onion; bell pepper and garlic in oil until onion is translucent.
  2. Add beans, stock and oregano.
  3. Heat thoroughly.
  4. Seed and chop yellow and jalapeño chiles and put into blender.
  5. Add lime juice and tomato.
  6. Puree to finely mince the chiles.
  7. Add black bean mixture to blender (in batches) and puree.
  8. When everything is pureed, return it to the soup pot.
  9. Simmer at least 1.5 hours.
  10. Add wine and fresh cilantro to taste.
  11. Garnishes: rice, grated cheeses, diced onion, salsa, sour cream, plain yogurt, grilled sausages.
