Fruit Compote

Description
This topping is good on non-dairy frozen desserts, pancakes and French toast.
Ingredients
- ½ lb fresh or frozen fruit of your choice (suggestions include strawberries, raspberries, blueberries, peaches, pineapple or any combination thereof)
- 1 cup water
- 3 tbsp arrowroot powder
- 6 tbsp maple syrup
Procedures
- Heat the fruit in half the water and mash them as they heat (or you can slice them up prior to heating).
- Mix the remaining water thoroughly with the arrowroot powder, making sure there are no lumps.
- Add the arrowroot mixture and sweetener to the fruit and stir constantly over medium heat until the sauce thickens and becomes brightly coloured.
- Chill and serve.
