Ingredients

Procedures

  1. In a saucepan, heat orange juice, raisins and marmalade until marmalade melts.
  2. Remove from heat and stir in brown sugar, cinnamon, ginger, and rice; set aside.
  3. Heat olive oil in pressure cooker and add chicken chunks.
  4. Lightly brown.
  5. Pour in orange juice mixture.
  6. Lock lid and bring to full pressure.
  7. Adjust heat, maintaining pressure, and cook for 10 minutes.
  8. Quick-release pressure.
  9. Stir in coconut and season to taste with salt and pepper.
