  1. In a heavy skillet ,over moderate heat,melt the butter with the olive oil.
  2. When the foaming decreases add the potatoes.
  3. Turning frequently cook until tender and golden brown.
  4. Season with salt and a little pepper.
  5. Sprinkle with parsley and serve.
