Description
Ingredients
- 1 tbl virgin olive oil
- 2 tbl fresh rosemary
- 2 tbl fresh sage sliced
- 2 tsp fresh oregano
- 1 tsp fresh lime thyme
- 1/2 tsp kosher or sea salt
- 1 tsp cracked pepper
- 1 x yam peeled and cut in chunks
- 1 x sweet potato peeled and cut in chunks
Directions
- Pour oil into a large baking pan and swirl to cover bottom. Arrange herbs over oil, sprinkle with half the salt and pepper.
- Arrange yam and sweet potato chunks on top, sprinkle with remaining salt and pepper and bake at 350 degrees until soft (35–40 minutes).
- Serves Four to Six
