Description

Ingredients

Directions

  1. Rinse the filet with cool water. Rub with lime halves. Split the filet down the middle, going the entire length of the filet. Be careful to split it open and not cut it into two pieces.
  2. Lay the filet open on counter. Place the onions, minced garlic and 3 strips of Bacon along the entire length. Sprinkle with seasoned salt and pepper. Fold the filet back the way it was before splitting. Wrap the filet with the remaining strips of Bacon, using toothpicks if necessary to keep in place. Let the filet marinade like this for 2 to 4 hours in refrigerator.
  3. Remove the filet from pan and sauté in large skillet, just enough to give a little color. Remove from skillet and place in baking dish. Bake in moderate oven, 350 degrees, for 45 minutes to 1 hour or until tender. Remove toothpicks, slice diagonally in thin slices and serve hot.
