Ingredients

Directions

  1. In medium pan, over medium heat, mix the ½ cup orange juice, ½ cup sliced scallions and ¼ tbsp grated orange peel.
  2. Bring to boil.
  3. Cook 1 minutes.
  4. Add rice.
  5. Stir well to coat and cook 1 minute.
  6. Add chicken broth.
  7. Return to boil.
  8. Reduce heat to low.
  9. Cover and simmer 20 minutes or until rice is tender and all liquid is absorbed.
  10. Remove from heat.
  11. Stir in parsley and season to taste with pepper.
