Description

Makes 8 servings.

Ingredients

Procedures

  1. Fry bacon until crisp in heavy kettle.
  2. Add onion; cook until light brown.
  3. Stir in flour, then boiling water, salt and pepper.
  4. Stir well.
  5. Add ducks to kettle.
  6. Add more water to cover, if necessary.
  7. Cover and simmer 1½ hours.
  8. Cool; skim fat from top.
  9. Add shrimp, oysters and tomatoes; cook 10 minutes more.
  10. Remove from heat; add green onion tops, parsley and gumbo file.
  11. Serve over rice.
