- 3 Cups sugar
- 1 Cup salad oil
- 4 eggs, Beaten
- 2 Cups Cooked, Mashed pumpkin (or 16 Oz. Can)
- 3-1/2 Cups flour
- 1 Tsp. baking powder
- 2 Tsp. salt
- 2 Tsp. baking soda
- 1/2 Tsp. Ground cinnamon
- 1 Tsp. Ground nutmeg
- 1 Tsp. Ground allspice
- 2/3 Cup water
- 1 to 1-1/2 Cups Chopped pecans, Optional
Combine sugar, oil, And eggs; Beat Until Light And Fluffy. Stir InPumpkin. Combine Dry Ingredients, And Stir Into pumpkin Mixture. Add WaterAnd Nuts; Mixing Well. Spoon Batter Into 2 Well-Greased 9x4 Loaf Pans. BakeAt 350 For 65-75 Minutes. Makes 2 Loaves.
