FROZEN CHOCOLATE FRANGOS
1 c. butter
2 c. powder sugar
9 tbsp. unsweetened chocolate or 3 (1 oz.) squares melted and cooled
5 egg yolks
1/2 tsp. peppermint flavor
2 tsp. vanilla
1 c. vanilla wafer cookie crumbs
18 cupcake liners
Beat butter sugar. Add the chocolate then egg yolks. Beat. Add vanilla and peppermint flavor. Mix well. Line bottom of cupcake holders with cookie crumbs.
Place large spoonful of mixture.
Place in freezer 45 minutes or 1 hour before serving. May be topped with whipped cream. Enjoy.
