Pumpkin Substitute

Pumpkins are unavailable most of the time in some countries. An excellent substitute for all uses is made from the following:

Ingredients

• 1 kg (apx 2 lbs) mixed carrot & rutabaga
• 500g (apx 1 lb) plain yogurt

Directions

1.Puree the vegetable mix until smooth

2.Add the yogurt.

3.Use in place of pumpkin.

Tips

• Frozen carrot & rutabaga mix make this a very easy substitution.
• Puree thoroughly to obtain a smooth puree.
• The ingredients can be added whole to foods that will be pureed later.
• Other winter squashes may also be used as substitutes for pumpkin
