Zucchini Pasta Bake

Ingredients

  • 400 g of any small pasta
  • 250 g cheese
  • 2 eggs
  • 200 mL milk
  • 50 g butter
  • 3 medium zucchini
  • vegetarian stock
  • salt and pepper

Procedure

  1. Cook the pasta as directed on the packaging.
  2. Combine the eggs, milk, salt, and pepper in a mixing bowl.
  3. Grate the cheese and add to the mixture.
  4. Melt the butter and add to the mixture.
  5. Boil a small amount of water and add the stock, then stir it into the mixture.
  6. Grate the zucchini and stir through the mixture.
  7. Once the pasta has cooked, stir it into the mixture.
  8. Grease an oven tray or baking pan and spread the ingredients from the bowl evenly in it.
  9. In an electric oven, bake at 200 degrees C (400 F) for about 30 minutes, or until the pasta bake is firm all the way through.
