strozzapreti (also known as strangolapretti) literally means "priest chokers" or "priest stranglers." The name is apparently ancient, and although one is led thereby to suppose an association with a notorious episode of ecclesiastical gluttony, no credible attribution is available. Marcella Hazan briefly discusses this in the pasta glossary (p466) in More Classic Italian Cooking, Alfred A. Knopf: New York, 1976.
